This weekend, I was sitting in my apartment trying to come up with ways to use up all the apples I had sitting in my fridge from the orchard a few weeks ago. I had already made an apple crisp and sautéed apples for oatmeal… then I landed on this cinnamon apple bread recipe.
This apple bread is just the right amount of sweet and packs in 10 grams of protein without crazy calories. This loaf makes about 8 pieces, more if you like slimmer pieces, for only about 200 calories each. That’s a win if you ask me!
I’m truly a sucker for anything apple cinnamon and pumpkin flavored this time of year. But so many of these fall recipes are loaded with ungodly amounts of sugar. I’m excited to share this apple bread recipe with you guys because it’s low in sugar and you can eat a piece or two without any guilt. Hell, eat the whole loaf if you’re feeling hungry. Carbs > everything.
Ingredients & Substitutes
Chopped Apples: I used suncrisp apples we picked at the apple orchard, but honestly any apple would work here — honeycrisp, gala, pink lady, gold delicious, granny smith.
Stevia: If you are sensitive to stevia or don’t have any on hand, you can replace this with another sweetener or your choice. I’ve only tested this recipe with stevia, but sugar is sugar so brown sugar, cane sugar or coconut sugar should work.
Cinnamon: You won’t want to skip the cinnamon because it’s key to getting the apple cinnamon vibes for this recipe.
Whole wheat flour: Although I haven’t testing this recipe with other flours, traditional all purpose flour should work. I would stay away from almond or coconut flour unless you add extra. Proceed with caution, this is uncharted territory without whole wheat flour.
Baking soda & baking powder: The basic stuff you have in your spice cabinet. No replacements, please.
Plain greek yogurt: Any kind of greek yogurt would work here. If you opt for vanilla flavored one, just know it will give the bread more of a vanilla taste and will likely be a little sweeter, but that’s not a bad thing. Really the greek yogurt is used here in place of oil to keep the bread moist.
Apple sauce: I like the cinnamon kind but any flavor will work here. If you are feeling extra, you could even make your own.
Maple syrup: You can use honey or agave here if you don’t have maple syrup. This apple bread is not super sweet, so if you like your breads sweet, I recommend adding in an additional 1/4 cup or so.
Egg whites: You can either use the egg whites of 4 large eggs or the kind that comes out of the carton. I haven’t tested this with normal eggs, but swapping the 4 egg whites for 2 full eggs should work fine.
Vanilla Extract: If you don’t have vanilla, don’t sweat it. It’s nice to have but not essential for making the bread amazing.
How to Make Cinnamon Apple Bread
I swear this is the best apple bread recipe ever and it’s so easy to make. You’ll start out with three bowl and add apple mixture ingredients to one, wet ingredients to another and dry ingredients in a large bowl. Once all of the ingredients are combined well in their respective bowls, slowly add the wet ingredients to the dry. Once fully mixed, fold in the apple mixture.
Either spray your bread pan with spray oil or add in parchment paper to make sure it doesn’t stick. Carefully pour the bread dough into the bread pan, smoothing the top with a spatula and making sure it hits all of the corners.
Throw in a 350-degree oven for about an hour. Then comes the hardest part, letting it cool before diving in. You can store the bread in an airtight container or a gallon freezer bag on the counter for 1 day or two. After that, store in the fridge to ensure it’s doesn’t go bad. After 5 days or so, store the remaining bread in the freezer.
I made a double batch of this apple bread and stored one right in the freezer. You can either freeze as a full loaf or cut in slices and store in freezer bags to consume within 3 months. But let’s be honest, this won’t last that long at anyone’s home, it’s just that good.
