Ingredients
Apple Filling
3small apples, chopped~ 365g, use 6 apples if you are making with a 9x9 pan, I used sun crisp but any apple variety works
2tbspsteviaor sweetener or choice
2tbspcornstarch16g
2tspcinnamon
Crisp Topping
3/4cupoats75g
1/4cupwhole wheat or all purpose flour30g
1tspcinnamon
2tbspmaple syrup30 g
1tbspcoconut oil, melted14g
Instructions
Preheat oven to 350 degrees.
Mix all apple filling ingredients in a large bowl until the apples are coated.
Scoop apple filling into baking cups or pour in 9x9 baking pan.
In the same large bowl, mix the crisp topping ingredients. The mixture will seem really dry at first but keep mixing until well combined.
Scoop or pour topping on top of the apple filling.
Bake for 30-40 minutes, depending on how soft you'd like the apples.
Once baked, let cool before eating. If making in baking cups, you can eat after the apple crisp cools for 10 minutes or so. If making in a 9x9, you'll want to let it cool for longer to allow the apple filling to absorb any remaining liquid.
Serve warmed up with a scoop of vanilla ice cream on top, if you'd like!
Notes
Store in the fridge for a week or in the freezer for 3-6 months. If freezing, reheat in the oven or air fryer to achieve the right crisp texture of the topping.
