It’s really hard to find healthy desserts that compare to the real thing, I get it. But when you are trying to stay on track towards your fitness goals, endless amounts of cookies and brownies just won’t cut it. That’s why I created these chocolate peanut butter fudge no-bake freezer cookies!
If you tasted these without knowing the ingredients, I guarantee you wouldn’t guess they were healthy. And for only 68 calories each, they are the perfect snack to indulge in when you have a sweet tooth!
I wanted to create a healthy dessert that utilized ingredients many of us have as staples in our fridge and pantry. Greek yogurt, protein powder and peanut butter are things I can not live without, which are the main ingredients in this recipe. For those of you who are allergic to peanuts, easy swaps can be made for other nut butters.
I remember the first time I made these. My mom was visiting me in Chicago for the weekend and I wanted to have something tasty on hand. When she got in after the long drive from Northern Michigan, she tried one and was shocked at the taste. If I hadn’t told her, or if she hadn’t assumed I would make something healthy, she would have thought they were brownie bites.
I will warn you, you want to let these thaw for like 60 seconds before you dig in. They are like rock hard coming out of the freezer. When you throw them in the freezer, place them on parchment paper or a plastic plate. If you go the plate route, you may have to use a butter knife to pry them off the plate before putting them in an air tight container. If you have difficulties with this, I’ll run hot water in the backside of the plate.

Chocolate Peanut Butter No Bake Freezer Cookies
Ingredients
- 1/4 cup plain greek yogurt
- 1/4 cup peanut butter You can use powdered peanut butter (8 tbsp powder peanut butter + 6 tbsp water)
- 1 tsp vanilla extract
- 4 TBS chocolate chips Add more if you'd like
- 3 scoops chocolate protein powder
- 1 TBS Stevia optional
Instructions
- Combine protein powder, peanut butter, vanilla ingredients and stevia in a large bowl.
- Slowly add plain greek yogurt to form a doughy consistency.
- Fold in the chocolate chips.
- Scoop dough into onto a baking sheet (lined with parchment paper) or plate.
- Place in freezer for at least 30 minutes.
