Summer has always been my favorite time of year. Growing up, we used to spend the summers up at our lake house swimming, running around the yard and eating all of the yummy bbq foods. Even in my mid-twenties, those memories still hold a prominent place in my heart.
If you’ve ever been to Chicago in the summer, you know how amazing it is. Those of us who live here, live here for summertime Chi. Being close to Lake Michigan with the cool breeze in your hair, drinks in your hand, sitting on the beach – there’s nothing better. And I’m extra stroked for this summer to have an apartment with rooftop grills. You know I’ll be up there weekly grilling kebabs, specifically these simple grilled fruit salad kebabs with feta.
The combination of fruit and feta is like a party in your mouth. And when you grill some fruits, they get even sweeter. Specifically pineapple, strawberries, peaches, mangos, etc. This is a recipe you can’t go without this summer! Since making this recipe, I’ve eaten the grilled fruit and feta on salads with chicken, on the side of a delish sandwich and on its own. Regardless of what you pair it with, it’s bombbbb. I can promise you that!
Ingredients & Alternatives for Fruit Salad Kebabs
Block feta: For this recipe, you’ll need block feta to add to the skewers. Alternatively, you could grill just the fruit and use crumbled feta on top when serving.
Fruit of choice: My favorites to grill for this fruit salad are peaches, pineapples and strawberries, but you could also use pears, mango or nectarines. Use whatever fruit you have on hand!
How to Make Fruit Salad Kebabs
This simple grilled fruit salad kebabs could not be easier to make! All you need to do is chop up all of your fruit, which you can do a day or two beforehand if you’d like. For the feta, you’ll need to cube the block into 1 inch pieces, the bigger the better.
Once everything is chopped up, take your skewers and string the fruit and feta onto them, alternating between the two. I like to do one of each fruit, a piece of feta, then repeat.
Turn on the grill to medium heat and let it heat up. Place the fruit salad kebabs on the grill on each side for 2 minutes or until the fruit lightly seared and the feta is a little melty. Take them off the grill, de-skewer and enjoy on top of a salad with chicken, on the side of your burger or on its own.
