Whenever I have extra time in the morning before work, I’ll try and make a nicer breakfast like an omelet or scrambled eggs. But let’s be honest, I’m usually rushing to get ready to log on to work on time every day so there’s no time for a glamorous breakfast. Well not anymore — this copycat Starbucks breakfast sandwich can be made ahead over the weekend and make breakfast during the week a breeze and delicious.
Once I got on the meal prep breakfast train, my mornings became so much less stressful. If you’re working from home, you can warm your Starbucks breakfast sandwich up while you’re going through your email first thing in the AM. If you are going into the office, you can pop yours in the microwave when you get to work. By the time you pour yourself a cup of coffee, your breakfast will be all ready for you.

Ingredients & alternatives for Copycat Starbucks Breakfast Sandwich
- Turkey bacon: For this recipe, we will be using turkey bacon to make it a little healthier and more macro friendly, but you can totally use normal bacon if you prefer it!
- Egg whites: You can either use just the egg whites from an actual egg or keep it simple and buy the egg whites in a carton at the grocery store. If you go to Costco, I highly recommend buying the Kirkland brand since it’s so much cheaper.
- Laughing Cow cheese: Any flavor of the Laughing Cow cheeses will work here, although I LOVE the spicy pepper jack or garlic & herb ones. If you prefer, you can use normal cheese slices, too.
- English muffins: Any plain flavor of english muffins will work — whole wheat, multi-grain or white.
How to make Copycat Starbucks Breakfast Sandwich
Not only is this Starbucks breakfast sandwich a healthy way to start your day, but it’s also insanely easy and quick to make. A little prep on a Sunday or Monday lets you have a delicious breakfast during the workweek without the hassle of cooking.
First thing’s first — preheat the oven to 375°F. While the oven heats up, you can start prepping the eggs and turkey bacon that will go in the oven.
Grab a muffin tin and baking sheet and spray both with oil. Carefully pour 46 grams or one egg white into each muffin tin cup and place your turkey bacon on the baking sheet. Once the oven is preheated, you can add both in for 8-12 minutes. I recommend flipping the turkey bacon halfway through and cooking the eggs for a few minutes less than the bacon. To test if the eggs are done, you can poke a knife or toothpick in the middle — if it’s not runny, you are golden.
Now it’s time to assemble the Starbucks breakfast sandwiches. Start by opening up each of the english muffins and spreading a Laughing Cow cheese on each. Once cooled, add one egg white and 2 pieces of bacon (cut in half) onto each english muffin. Put the top of the muffin back on and enjoy!
For storage, you can either wrap them in tin foil or an airtight container. Once you are ready to warm them up, you can place the Starbucks breakfast sandwich in the microwave for 30-second increments or in the oven on the broiler until warm. Feel free to freeze them if you won’t eat them all in 5 days.

Copycat Starbucks Breakfast Sandwich (Meal Prep & Macro Friendly)
Equipment
- Muffin pan
- Baking sheet
Ingredients
- 10 pieces turkey bacon Jenny O is my go-to
- 5 egg whites 230g
- 5 whole wheat english muffins could swap for bagels or bagel thins, too
- 5 Laughing Cow Cheeses any flavor works, but the pepper jack is my favorite
Instructions
- Preheat the oven to 375°.
- Spray baking sheet and muffin tins with oil.
- Pour one egg white, or 46 grams, into 5 muffin tin cups and lay the turkey bacon on the baking sheet.
- Put both the muffin tins and the baking sheet into the oven for 8-12 minutes. I recommend flipping the turkey bacon halfway through. The turkey bacon usually takes a few minutes longer than the egg whites.
- While the eggs and bacon cook, open each of the english muffins and spread one laughing cow cheese on each. You can put the whole cheese on one side of the muffin, or spread half on each side.
- Remove baking sheet and muffin tin from the oven and let cool for a few minutes.
- Using a knife or baking spatula, scoop egg whites out of muffin tin and place one on each english muffin.
- Cut or rip each piece of bacon in half and place 4 halves on each sandwich.
- Close the muffins and enjoy!
