PB&J Chocolate Freezer Bites, basically our childhood favorite, only in a healthy & macro-friendly treat form. I don’t know about you, but I absolutely love frozen fruit, especially bananas. I already freeze them to eat for a treat and throw in smoothies to make them extra creamy and thick. If you don’t already have bananas in your freezer, you have to get on that!
These peanut butter and jelly sandwiches are different than the ones we packed in our lunchboxes. Instead of bread we are using frozen bananas, adding chocolate and making them mini for sweet treats to be stored in the freezer. I even made a few without chocolate to give to our family dog and she loved it. Peanut butter and jelly is the ultimate combo so this recipe was truly a no brainer.
Ingredients
- Bananas: You’ll chop 2 medium bananas in 1 inch pieces, lay them on a cookie sheet or plate and freeze for a few hours. If you’re not already freezing bananas add it to your freezer as a staple.
- Nut butter: The preferred nut butter of choice for this recipe is peanut butter, but cashew or almond butter would work great, too. I always look for the natural nut butters without hydrogenated oils and added sugars.
- Jelly: Choose whatever flavor of jelly you like the most or whatever you have on hand for this recipe. Anything berry flavored would be perfect – strawberry, raspberry, blueberry or blackberry
- Dark chocolate chips: You can opt for milk chocolate here, whatever you prefer. Be sure to opt for dairy-free chocolate chips if you have that dietary restriction.
How to make PB&J Chocolate Freezer Bites
It could not be easier to make these PB&J sandwich freezer treats. Start by cutting bananas in 1 inch piece, setting on a cookie sheet or plate, then placing in the freezer for at least 2 hours. You can do this part days in advance or constantly have bananas in the freezer, like I do 😂
When the bananas are frozen, mix together the peanut butter and jelly in a small bowl until well combined. Take the bananas out of the freezer and use a teaspoon to spoon the PB&J mixture on half of the banana pieces. Then you add the other bananas pieces on top of the PB&J mixture to form little sandwiches.
In a new small bowl, add in the chocolate chips and warm in the microwave for 30 second increments, stirring in between. Keep the chocolate chips going in the microwave until they are completely melted. Finish by drizzling the chocolate on top of the PB&J banana sandwich bites and place back in the freezer for at least 30 minutes.
The longer they stay in the freezer, the better they will taste since they will be thoroughly frozen. These are the perfect summer treat for those hot, humid days. I even made a few without chocolate to give to our dog and she absolutely loved them.
