I was so excited to spot the brown rectangles with colorful sprinkles in my lunchbox, if you know, you know… Those Little Debbie brownies were the best addition to lunch. But brownies aren’t only for kids, they’re for us adults, too! Except adults have to care a little bit more about our health…
I created these easy health brownies to only include 2 ingredients and be ready in 30 minutes. These brownies are just as good as the Little Debbie favorites our moms put in our lunchboxes growing up but with less sugar, saturated fat and calories.
The pumpkin puree makes the brownies super moist without adding a flavor that distracts from the chocolate. I promise you can’t even taste the pumpkin!
What You’ll Need
One box of your favorite brownie mix: I used the Pillsbury Sugar Free mix
Can of pumpkin puree: The pumpkin creates the perfect texture without adding a distinct taste. If you don’t like pumpkin, you won’t even be able to taste it.
8×8, 9×9 or 9×13 pan: Size really doesn’t matter here, so work with what you have. I made this originally with the 9×13 cake pan and it made a thinner brownie, whereas the brownie pans would provide a thicker brownie. It’s truly preference.
Cute cookie cutter or a knife: To keep things fun, you can cut the brownies with cookie cutter. This recipe debuted around Valentine’s Day so I went with the heart-shaped cutter, but you could do any shape. Or just use a knife and cut them up in normal. Either way, they will taste the same!
2 Ingredient Healthified Little Debbie Chocolate Brownies
Ingredients
- 1 box of brownie mix I used Pillsbury Sugar Free mix
- 1 15 oz can pumpkin puree
Instructions
- Preheat oven to 350 degrees.
- Mix brownie mix and pumpkin puree in a mixing bowl until well combined.
- Spray 9 x 13 cake pan with oil and pour mixture into the pan, smoothing out with a spatula.
- Place pan in the oven for 25 minutes or until cooked thoroughly.
- Let brownies cool before cutting.
