Apple Mixture
1cupchopped apples~120 g, you could use more here if you'd like but don't go overboard
2tbspstevia or sweetener or choice
1tbspcinnamon
Dry Ingredients
2cupswhole wheat flourSee substitutions list for alternatives
1 1/4tspbaking powder
1/2tspbaking soda
Wet Ingredients
1 1/4 cupplain greek yogurt
1/4cup applesauce
1/3cupmaple syrupadd additional if you like your bread sweeter
1/2cupegg whites (122g) or 2 eggs
2tspvanilla extract
Instructions
Preheat oven to 350 degrees.
In a large bowl, mix dry ingredients.
In another bowl, combine wet ingredients.
In a small bowl, combine apple mixture ingredients.
Slowly add wet ingredients to dry ingredients, mixing until well combined.
Fold in apple mixture.
Spray bread pan and pour in bread dough.
Place bread pan in the oven for 50-60 minutes. Stick a knife or toothpick in the middle — if it comes out clean, the bread is done. If the top of the bread starts to get golden brown but the inside isn't quite cooked, place a piece of tin foil on top.
Let cool thoroughly before storing.
Notes
Store bread in foil and a gallon freezer bag and leave on the counter for a few days. After that, put bread in the fridge to keep it fresh. Bread can also be frozen as a whole loaf or as slices for three months.
