Healthy & High Protein Greek Yogurt & Applesauce Cinnamon Apple Bread

Ingredients

Apple Mixture

  • 1 cup chopped apples ~120 g, you could use more here if you'd like but don't go overboard
  • 2 tbsp stevia or sweetener or choice
  • 1 tbsp cinnamon

Dry Ingredients

  • 2 cups whole wheat flour See substitutions list for alternatives
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda

Wet Ingredients

  • 1 1/4 cup plain greek yogurt
  • 1/4 cup applesauce
  • 1/3 cup maple syrup add additional if you like your bread sweeter
  • 1/2 cup egg whites (122g) or 2 eggs
  • 2 tsp vanilla extract

Instructions

  • Preheat oven to 350 degrees.
  • In a large bowl, mix dry ingredients.
  • In another bowl, combine wet ingredients.
  • In a small bowl, combine apple mixture ingredients.
  • Slowly add wet ingredients to dry ingredients, mixing until well combined.
  • Fold in apple mixture.
  • Spray bread pan and pour in bread dough.
  • Place bread pan in the oven for 50-60 minutes. Stick a knife or toothpick in the middle — if it comes out clean, the bread is done. If the top of the bread starts to get golden brown but the inside isn't quite cooked, place a piece of tin foil on top.
  • Let cool thoroughly before storing.

Notes

Store bread in foil and a gallon freezer bag and leave on the counter for a few days. After that, put bread in the fridge to keep it fresh. Bread can also be frozen as a whole loaf or as slices for three months.
