Healthy Goat Cheese & Prosciutto Pizza

Equipment

  • Cast iron (alternatively you could use a pizza stone or cookie sheet)
  • Large mixing bowl
  • Stand mixer or hand mixer (optional)

Ingredients

Pizza Dough Ingredients

  • 1 cup self rising flour or use 1 cup flour, 1¼ tsp baking powder and ½ tsp salt
  • ¾ cup non-fat plain greek yogurt

Pizza Toppings

  • ¼ cup pizza sauce any will work here
  • 2 oz goat cheese
  • 3 slices prosciutto
  • 10 black olives Optional
  • Handful arugula Optional

Instructions

  • Place your cast iron skillet in the oven and preheat to 500 degrees.
  • In a large mixing bowl or your stand mixer, add your self-rising flour. If you do not have self-rising flour, you can instead sift together 1 cup flour, 1¼ tsp baking powder and ½ tsp salt.
  • Add in your plain greek yogurt and mix until well combined with a spatula and/or your hands. The dough may be a little bit sticky, which is fine. You can add more flour if the dough is too sticky.
  • Carefully remove your cast iron skillet from the oven and spray with oil. Then dump your dough on top of the cast iron skillet and begin pushing the dough out to meet the edges. Make sure the dough is even thickness throughout.
  • Place dough in the oven for 15 minutes.
  • While the dough bakes, slice the black olives, crumble the goat cheese and grab your prosciutto. Set all ingredients aside.
  • Carefully remove your cast iron skillet from the oven. Add the pizza sauce, goat cheese, prosciutto and black olives. Do NOT add your arugula yet.
  • Place cast iron skillet back in oven for 10-15 minutes, depending on your desired texture. The longer it cooks, the more crispy the dough and prosciutto will be.
  • Remove the cast iron from oven and add arugula. Place back in the oven for about 1 minute, or until the arugula starts to wilt on top of the pizza.
  • Remove cast iron from oven and let cool for a few minutes. Remove from pan and slice into 4 pieces.

Notes

Store leftover pizza in an airtight container for up to 3 days or so.
