This recipe combines your favorite charcuterie board ingredients into a healthy cast iron pizza that makes dinner easy and delicious! I know that prosciutto pizza is a thing, but I had never had it before making this recipe and I feel like I’ve been missing out on something amazing my whole life. Do yourself a favor and make this healthy cast iron pizza asap!
Growing up, I remember pizza being a weekly ritual. Between sports practice, homework and work, my whole family was so busy that one day a week or so we would pick up Hot-N-Ready pizzas for a simple dinner. And I remember being so excited on those nights because it meant loading up my plate with carbs and dipping sauces and diving in. But somewhere along the way, pizza got a bad rep in my mind. Now I’m back on the pizza train with this healthy cast iron pizza and there’s no way I’m going back now! Life is all about balance so as long as we’re eating our veggies, the pizza every once in a while will do us good.
But if I’m going to eat pizza, it’s going to be something amazing. No offense but I don’t see any Hot-N-Ready’s in my future. The only pizza I’m indulging in lately is this healthy cast iron pizza with goat cheese, prosciutto, black olives and arugula. It’s super flavorful, easy to make and macro-friendly, you can’t go wrong!
INGREDIENTS & ALTERNATIVES FOR THIS HEALTHY CAST IRON PIZZA
Self rising dough: You can buy self-rising dough from the grocery store or online, but you can also make it yourself if you have normal flour. You’ll combine 1 cup flour (I like to use whole wheat flour), 1 1/4 tsp baking powder and 1/2 tsp of salt.
Non-fat plain greek yogurt: I haven’t tested this recipe with other kinds of yogurt so try to stick to non-fat. The quality is also crucial here. You want a true, thick greek yogurt. I like Fage or Chobani, but I’ve also used Kirkland brand from Costco. And be sure to dump out any of the liquid on top before you use it in this recipe or it’ll be too liquidy.
Pizza sauce: You can use any pizza sauce your heart desires. I used Ragu brand when I first made this recipe, doesn’t have to be anything fancy! I like to buy the smaller jars at the store so I don’t have too many leftovers, less wasteful!
Goat cheese: You’ll need plain goat cheese for this recipe. The garlic & herb, blueberry vanilla and cranberry versions are delicious but not for this recipe. I got mine at Costco in a 2 pack for like $6 and you can freeze one. Such a great deal IMO.
Prosciutto: The fancy, thin sliced ham that you get in the nice cheese section of the grocery store. I also got my prosciutto at Costco – 2 large packs for like $17, such a steal!
Black olives: You can either buy the canned, whole black olives or buy the ones that are pre-sliced. Whichever you prefer!
Arugula: Not a necessary ingredient but definitely a recommended one. The peppery taste of the arugula on top of the pizza really is the cherry on top.
HOW TO MAKE THE BEST HEALTHY PIZZA DOUGH
For this pizza dough recipe, you’ll only need 2 ingredients — self rising flour and non-fat plain greek yogurt. If you don’t have self rising flour, you can make it by combining 1 cup flour (I like to use whole wheat flour), 1 1/4 tsp baking powder and 1/2 tsp of salt. Your first step will be adding your self rising flour or the flour, baking powder and salt to a large mixing bowl.
Next up, you’ll add your plain greek yogurt to the bowl. Be sure to dump out any liquid sitting at the top of your yogurt before adding to dough. The better quality yogurt here, the better. I like to use Chobani or Fage since it’s strained really well and is a thicker consistency.
If you have a stand mixer, you can mix your ingredients that way. If not, you can use a hand mixer or use your hands to mix well. The dough may be a little bit sticky, but that’s fine. If it is super sticky, add a little more flour to compensate.
And there you have your dough! Now onto making the pizza….
HOW TO MAKE GOAT CHEESE & PROSCIUTTO HEALTHY CAST IRON PIZZA
Start by preheating your oven to 500 degrees, or as high as it will go. Place your cast iron skillet in there to warm up as you prepare your dough. If you don’t have a cast iron skillet, you need one asap. I recommend this one from Amazon.
Prepare your dough using the above directions. Once you have your dough, take your cast iron out of the oven and lightly spray it with oil.
Dump the dough out of your large mixing bowl and into the cast iron and carefully start pushing the dough out to the edges. Make sure the dough is distributed evenly. Alternatively, you could roll the dough with a rolling pin or press out with your hands on the counter and place in the cast iron or use a cookie sheet or pizza stone instead.
Place the dough in the oven for 15 minutes or until it starts to turn golden brown.
While the dough bakes, slice the black olives, crumble the goat cheese and grab your prosciutto. Set all ingredients aside.
Carefully remove your cast iron skillet from the oven. Add the pizza sauce, goat cheese, prosciutto and black olives, but hold on adding your arugula for now. Place your pizza back in the oven for 10-20 minutes, depending on your desired texture. The longer it cooks, the more crispy the dough and prosciutto will be.
Remove the pizza and add arugula. Place back in the oven for about 1 minute, or until the arugula starts to wilt on top of the pizza.
Remove cast iron from oven and let cool for a few minutes. Slice into 4 pieces and enjoy!

- Large mixing bowl
- Stand mixer or hand mixer (optional)
Ingredients
Pizza Dough Ingredients
- 1 cup self rising flour or use 1 cup flour, 1¼ tsp baking powder and ½ tsp salt
- ¾ cup non-fat plain greek yogurt
Pizza Toppings
- ¼ cup pizza sauce any will work here
- 2 oz goat cheese
- 3 slices prosciutto
- 10 black olives Optional
- Handful arugula Optional
Instructions
- Place your cast iron skillet in the oven and preheat to 500 degrees.
- In a large mixing bowl or your stand mixer, add your self-rising flour. If you do not have self-rising flour, you can instead sift together 1 cup flour, 1¼ tsp baking powder and ½ tsp salt.
- Add in your plain greek yogurt and mix until well combined with a spatula and/or your hands. The dough may be a little bit sticky, which is fine. You can add more flour if the dough is too sticky.
- Carefully remove your cast iron skillet from the oven and spray with oil. Then dump your dough on top of the cast iron skillet and begin pushing the dough out to meet the edges. Make sure the dough is even thickness throughout.
- Place dough in the oven for 15 minutes.
- While the dough bakes, slice the black olives, crumble the goat cheese and grab your prosciutto. Set all ingredients aside.
- Carefully remove your cast iron skillet from the oven. Add the pizza sauce, goat cheese, prosciutto and black olives. Do NOT add your arugula yet.
- Place cast iron skillet back in oven for 10-15 minutes, depending on your desired texture. The longer it cooks, the more crispy the dough and prosciutto will be.
- Remove the cast iron from oven and add arugula. Place back in the oven for about 1 minute, or until the arugula starts to wilt on top of the pizza.
