What could be better than cookies for breakfast? Trick question, the answer is nothing! Instead of eating a bowl of oatmeal for breakfast, these healthy oatmeal cookies come in clutch for meal prep or a delicious treat for any time of the day. And nothing tastes better than apple cinnamon oatmeal cookies 😋
Since we are still technically in fall until December 21, we have plenty of time to eat all of the pumpkin spice and apple treats. These cookies include minimal ingredients and take less than a half hour to bake. Not to mention they’re free of gluten and sugar.
Anyone can whip this healthy oatmeal cookie recipe. All you gotta do is add all the ingredients to a large bowl, scoop them out and throw them into the oven. I made a double batch and kept half out to eat and saved half in the freezer for another time.
4 Ingredients You’ll Need For These Oatmeal Cookies:
Old fashioned oats or quick oats: This is really based on preference or whatever you have on hand, but the old fashioned oats will hold everything together more. I’ve made these cookies with both and prefer the old fashioned option but the quick oats taste good, too. Keep it simple and use whatever you have in your pantry.
Apple sauce: Either from the large bottles of it or the little lunchbox cups.
Apple: Any kind of apples work here – red delicious, gala, pink lady, granny smith, whatever you prefer or have on hand.

Apple Cinnamon Breakfast Oatmeal Cookies
Ingredients
- 2 cups old fashioned oats or quick oats
- 1 cup Apple sauce
- 2 tsp Cinnamon
- 1 Medium chopped apple
- (Optional) Sweetener of choice stevia, honey, maple syrup, agave, etc.
Instructions
- Preheat oven to 350 degrees.
- Add all ingredients into large mixing bowl, mixing until fully combined.
- Spray cookie sheet with spray oil.
- Use a spoon or cookie scoop to create 1 inch balls of dough, placing onto cookie sheet.
- Press dough down to flatten dough.
- Place cookies in oven for 17-20 minutes.
- Let cookies cool on cookie sheet or cooling rack.
