I suffer from a serious sweet tooth. 8 pm hits and I always feel the strong urge to eat something chocolaty or dunked in peanut butter. My solution? Keeping healthy options on hand that allow you to indulge without feeling guilty like these chocolate chip peanut butter no bake cookies!
I’m also a sucker for pieces of chocolate and candy that’s been housed in the back of the freezer. These cookies combine all of my favorite things – cold chocolate, oats and nut butter. It couldn’t be easier to make and it’s likely the ingredients are sitting in your pantry as you read this.
While I was in college, I always had these on hand for nights after the bar or studying. Now, this treat satisfies my late night sweet tooth and post dinner dessert.
These cookies can easily be manipulated using different ingredients you have in your house, including additions or different mix-in’s if chocolate chips aren’t your thing.
Chocolate Chip Peanut Butter No Bake Cookies
Ingredients
- 1/2 cup Almond or peanut butter ~125g
- 2 scoop Chocolate protein powder ~50g, I used chocolate brownie Ideal Fit, you could also sub for cocoa powder or another flavor or protein powder
- 1/3 cup Unsweetened apple sauce, or mashed ripe banana ~113g
- 40-60 ml Unsweetened almond milk Can sub for other milks
- 3 cups Quick or old-fashioned oats 240g
- 1/3 cup Chocolate chips (or coconut, nuts, dried fruit, etc. for different mix in’s) ~60g
- Stevia to taste Optional
Instructions
- Add nut butter and apple sauce in microwave safe container. Microwave for 1:30, mixing well every 30 seconds.
- In a seperate bowl, add oats, protein powder and chocolate chips. Add in the nut butter and apple sauce mix.
- Slowly add in the almond milk until all ingredients are combined. The consistency of the dough should be thick – less liquid is better.
- Fold in your chocolate chips or additional mix-in’s.
- Use a tablespoon or regular spoon to scoop dough onto cookie sheet or large plate.
- Once all cookies are laid out, place in freezer for at least 2 hours.
